If you are a busy mom like me you are going to love this recipe. It seems like once school pickup happens we are going a million different ways nearly every evening. I love having easy recipes on hand that everyone will eat, yup even my picky kiddo. Not only is this recipe easy, it’s healthy. It is loaded with yummy flavorful veggies & protein. You can also swap any of the veggies out or even swap out the meat for a different kind.
Ingredients:
2 large sweet potatoes
1 yellow squash
1 zucchini
1/2 red onion
1 package of sausage
Olive oil
Pepper
Green Goddess spice
Directions:
PreHeat oven to 400*
Chop up all veggies & sausage in small pieces
Drizzle with Olive oil
Sprinkle pepper
Cover it pretty good with the green goddess spice
Place in oven for 20 minutes
Pull it out & flip veggies/sausage
Put back in over for 10 minutes
Enjoy, we like serve with cottage cheese & fruit!
